If there are two things that Texans know, it’s that Schlitterbahn is the Hottest, Coolest time in Texas AND good barbecue.
At Schlitterbahn, we pride ourselves on serving mouthwatering, slow slow-smoked brisket, daily to our guests. But what goes into our brisket? Hop on the BBQ train as we slow smoke our way into flavor town!
First, we source our beef from USDA certified providers all around the country.
Next, we trim the brisket to ensure only the best makes it to your plate.
Once we’ve trimmed our brisket, we season it before slow-smoking to perfection for 10 hours at 225 degrees Fahrenheit.
We then let is slowly cool down for an hour to let the meat set to preserve the tenderness and juiciness.
Culminating in a final product that looks something like this:

- Sliced brisket on a plate with two homestyle sides.
- Chopped brisket on a plate with two homestyle sides.
- Sliced brisket on a sandwich bun with pickles and onions.
- Chopped brisket on a sandwich bun with pickles and onions.
- Texas Brisket Cheesesteak Sandwich, grilled peppers and onions, plus Pico de Gallo and nacho cheese on a hoagie bun
- Enjoy it inside one of our stuffed turkey legs.
We anticipate that we’ll go through nearly 40,000 lbs. of brisket just this season!
